The best way to do it is hire a freelancer create it for you.

For the video section in second site, it's a part of our theme. You will need create post in: Gallery -> Choose video type.

Then create new section similar our demo: http://take.ms/6uJPX. Then add the gallery section in menu, it will work as your wish as second site.

For the blog section, I don't understand what you mentioned, if you don't want it, please remove the menu item name blog and news in your site. It will remove the blog section and blog link in your site.
