I'd like to remove "Home" from the main nav. However, when I do this, the first link in the nav (in this case being the "About" link) is overwritten to still take people to the home page instead of the about us page.
I've never worked with a theme that did this and I'd like to know how to change it immediately.

Hi,
I think the problem here from your configuration. Please try configuration your about page to front page in: Settings -> Reading -> Front page.
Then go to your menu backend and remove home menu item in your main nav.
